We believe there are several reasons that you should eat American Wagyu, but the taste profile is probably one of our favorites. Wagyu beef is indescribably tender and has a delectable marbling that kicks its flavors up to the next level. On a more technical note, the experts at the American Wagyu Association say health experts have discovered the mono-saturated to saturated fat ratio is higher in Wagyu than in other beef and the saturated fat contained in Wagyu is different.

The profile of marbled Wagyu beef is more beneficial and healthier. 40% of the beef is called stearic acid, which is regarded as having minimal impact in raising cholesterol levels.

Wagyu cattle have genetics that favor enhanced marbling in the muscle that we consume, leading to a better flavor profile and eating experience for our customers. We feel our genetics will produce something that will be an enjoyable experience for consumers that is local and straight from our farm to their plates.

Our family is very excited to offer our American Wagyu beef to consumers. We wanted to fill a void in the market, and we’re doing that by providing a unique, local, and high-quality product that people can enjoy from local restaurants—and hopefully soon from the grocery store. We already had high-quality genetics built into our cows, and we decided to share what we feel is the best quality for our family with consumers as well.

We have two product lines, therefore some of our cattle receive our organic grain, and others are solely pasture raised. We manage are cattle very carefully to ensure we are keeping track of their dietary intakes.

On our packaging we show very clearly if you are consuming our grass-fed or grain-fed Wagyu beef.

During the summer, our cows graze 25,000 acres of grass in Oregon’s Rogue Siskiyou National Forest where we have a summer grazing permit. This is a great summer location because there is a lot of rain which leads to great pastures for grazing. In the fall, we move our cattle to the foothills of California where they enjoy California’s mild winters.
